Prune Frittata recipe


6 oz of prunes.
½ cup of redcurrant juice.
6 medium eggs.
½ teaspoon of ground cinnamon.
1/3 cup of ground almonds.
1 tablespoon of butter.
2 tablespoons of brandy.
½ cup of flaked almonds.
2 teaspoons of icing sugar.


Soak prunes in the redcurrant juice for at least 8 hours or overnight.

Combine the eggs, cinnamon and ground almonds. Mix thoroughly.

In a heavy pan, melt the butter.

Add the prunes and juice; reduce by half.

Add the brandy.

Add the egg mixture and stir to combine.

Cook over very low heat for about 5 minutes without stirring.

When mixture is starting to firm, place under grill and cook for 3 minutes.

Finish with flaked almonds and icing sugar.
